  • 3 Roma tomatoes or 1 large tomato diced
  • 1 small white onion finely diced
  • 1 - 2 jalapenos, seeds and ribs removed OR 1 serrano pepper for spicier flavor
  • 1 small bunch of cilantro chopped
  • juice of 1 lime
  • 1 tsp canola oil
  • pinch of sugar or 1 tsp agave nectar
  • 1/4 tsp ground cumin
  • salt and pepper to taste


  • Combine all ingredients into a bowl and toss with a spoon. Taste for seasoning and add as needed.
  • Keep in an airtight container in the refrigerator for up to a week.
