Summer Watermelon Cucumber Salad

  • 3 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice
  • Pinch table salt
  • Freshly cracked black pepper
  • 1 small watermelon
  • 4-5 cucumbers sliced ½-inch thick on bias
  • 1 small shallot cut into slivers
  • 1/2 c whole parsley leaves
  • 4 ounces feta cheese crumbled


  • Begin by whisking the oil, lemon juice, salt, and pepper together in small bowl. Using a sharp knife, trim skin and rind from watermelon. Slice watermelon into ½-inch-thick slices, then cut slices into triangles and arrange on large platter. Tuck the cucumbers into the watermelon, sprinkle the shallots over the top of the salad and drizzle the whole thing with the dressing. Sprinkle the parsley and feta cheese to beautifully finish the salad and serve immediately.
  • Note: Feel free to substitute any seasonal fruits that you may like. Same goes for the cheese and herbs... heck, even the dressing! Be creative!
