Pumpkin 'Heavenly Waffles' with Maple-Balsamic Syrup

Ingredients
  

  • ½ c pure pumpkin puree not pie filling!!
  • 2 c. Heavenly Waffle mix
  • 2 c. soda water
  • 1 egg
  • 3 tbsp canola oil
  • 1 tsp pumpkin spice seasoning blend
  • 1 c. maple syrup
  • 1-2 tbsp balsamic glaze

Instructions
 

  • Heat oven to 250°F.
  • In a small saucepan, reduce the pumpkin puree by half, leaving ¼ cup. Remove to a bowl and let cool.
  • In a large blender, combine the Heavenly Waffle mix, soda water, egg and oil. Blend on high for 30 seconds. Add the pumpkin puree and seasoning. Blend on high for 30 more seconds.
  • Heat waffle iron to desired temperature according to your waffle iron’s instructions. Use a non-stick spray applied lightly to prevent sticking.
  • Cook waffles to desired brownness and remove to a cooling rack lined sheet tray and place in a heated oven to stay warm while you make the remaining 3 waffles.
  • In a small saucepan or microwave safe bowl, combine the maple syrup and balsamic glaze. Heat until just starting to bubble around the edges, about 1 min over medium heat or 20 seconds in the microwave. Remove from heat and whisk well. Taste and add more maple syrup or balsamic glaze to fit your tastes.
  • Serve over warm waffles.
