'Goat'Met Grilled Cheese

Ingredients
  

  • 3 oz Chèvre, plain goat cheese
  • 3 oz Boursin, garlic and herb blend
  • 2 slices provolone cheese
  • 2 slices sharp cheddar cheese
  • 4 slices bread any style
  • 3 oz butter softened
  • 2 oz mayonnaise
  • 2 tbsp grated parmesan cheese
  • 1/4 tsp garlic powder (granulated)
  • 1/4 tsp dried parsley flakes

Instructions
 

  • In a small bowl, combine the softened butter, mayonnaise, Parmesan, garlic powder and parsley. Stir together until well mixed and smooth. Set aside.
  • Combine the Chèvre and Boursin in a small bowl and use a spoon to whip them together until creamy.
  • Spread the goat cheese mixture onto two slices of the bread. (If you are like me, you’ll make sure to match up the bread pieces so that all the edges line up perfectly.)
  • Layer one slice each of the provolone and cheddar cheeses on top of the goat cheese mixture. Top with slice of bread.
  • Spread the butter mixture onto one side of each sandwich.
  • Warm a non-stick skillet over medium heat until a drop of water sizzles on it.
  • Place sandwich, or sandwiches, butter side down in hot skillet. Spread the butter mixture onto one side of each remaining slice of bread and place it butter side up onto each sandwich. Press lightly.
  • Cover w lid and let grill for 2 minutes or so, checking from time to time to make sure it doesn’t burn.
  • Flip carefully with a spatula and recover with lid for another 2minutes, checking on it to make sure it doesn’t burn.
  • Remove lid and flip again, if necessary, until both sides are golden and crispy and the cheese is melted and gooey.
  • Cut in half, on the bias (diagonally). Serve hot!
