Easy Fideo
Ingredients
- 1 (15.5 oz) can of fire roasted tomatoes
- 1 small onion quartered
- 1 clove garlic (1 large or 2 small cloves) smashed
- 1 cup chicken broth
- 1 tbsp olive oil
- 1/2 lb vermicelli or angel hair pasta
- 2 tsp Knorr Caldo de Tomate con Sabor de Pollo (Tomato Bouillon with Chicken Flavor)
- 1/4 tsp ground cumin
- 1/4 tsp dried oregano
- freshly ground pepper
Instructions
- Combine the tomatoes, onion, garlic and chicken broth in a blender. Blend until smooth.
- Strain the tomato mixture through a sieve into a bowl. Set aside.
- Heat olive oil in a large skillet (with a lid) over medium heat.
- Break the pasta into 3” pieces, using the width of your palm as a guide.
- Toast the pasta in the oil until golden brown and releases a nutty aroma.
- Add the strained tomato mixture, Knorr seasoning, cumin, and oregano. Stir to combine
- Reduce heat to low and cover with lid. Let simmer until pasta is cooked through and sauce is reduced by ⅓-½ . Season lightly with freshly ground pepper. TASTE, add a little salt** if necessary.
Notes
**Knorr seasoning is very salty. Be sure to taste the fideo before adding any salt to this dish.
