medium roasted beets
sliced

medium heirloom tomatoes
sliced

heirloom cherry tomatoes

goat cheese crumbles
Instructions
In a small bowl, whisk oil, lemon juice, salt and pepper until well combined. Stir in herbs.
Arrange beets and tomatoes on serving platter. Sprinkle with goat cheese. Drizzle with vinaigrette and serve immediately.
