Heat oven to 350°F.
Brush the bottom of a large baking dish with some of the melted garlic butter.
Spread the bottoms of each croissant, cut side up, along the bottom of the baking dish, on top of the melted butter.
Spread a teaspoon of jelly or jam onto each bottom half of the croissants. Layer the turkey over each croissant, using at least 2 slices. (I prefer 4, but I go big or go home.) Then top each with one strip of bacon cut in half,
Spread a teaspoon of mustard onto the top half of each croissant. Lay two pieces of cheese over the mustard.
Close the sandwiches and brush the tops with melted garlic butter, sprinkle with everything bagel seasoning then drizzle with honey. (If making ahead, cover the dish with foil and chill overnight in the refrigerator. Next day, heat the oven and sit sammies out at room temperature while the oven heats. Then simply follow the next step.)
Bake in a hot oven for 5-7 minutes or until the cheese is melted and the croissants are golden and shiny from the honey glaze. Remove from baking dish to platter and serve warm.
